Coconut Coffee Muffins
These coffee muffins are easy to do. What makes them stand out is the almond essence and coconut taste.
Makes 12 muffins. Preheat oven to 200ºC.
STEP 1: Sift together the dry ingredients:
1 3/4 cups self-raising white flour
1/4 tsp baking soda
STEP 2: Mix the wet ingredients in another bowl:
2 eggs slightly beaten
1/2 cup oil
2 tsps vanilla extract
1/4 tsp almond extract
1/2 cup of Prime Coffee espresso coffee
1/3 cup milk
3/4 cup brown sugar
STEP 3: Mix dry with wet ingredients and add:
1 cup coconut
1/2 cup walnuts
Mix well until the mixture is smooth, with no lump. Spoon in muffin tin. Decorate with whole walnuts brushed with honey.
Bake for 20-25 minutes or until a skewer inserted in the centre comes out dry.
