Coffee & Honey Cake



Prime Coffee - Coffee & Honey Cake

This moist spiced coffee cake is perfect for morning tea. Best of all, it is very easy to make. Even non-coffee drinkers will love this coffee & honey cake!

STEP 1: Sift together the dry ingredients:

1 3/4 cups self-raising white flour
1/2 tsp baking soda
2 tsp ground cinnamon
1/4 tsp ground cloves
1/4 tsp ground allspice

STEP 2: Mix the wet ingredients in another bowl:

2 eggs lightly beaten
1/2 cups vegetable oil (macadamia or sunflower oil)
1/2 cup honey
1/2 tsp vanilla extract
1/2 cup of warm Prime Coffee fresh coffee
1/4 cup milk
1/4 cup brown sugar
1/2 cup white sugar (if you like your cake very sweet, add more sugar)

STEP 3: Mix dry with wet ingredients and stir with whisk or electric mixer till the mixture is smooth, with no lump.

Preheat oven to 180
ºC (350ºF). Pour cake mixture in a 20cm cake tin lined with grease-proof paper.

Bake till cake springs back when you touch the centre. Depending on your oven, it can take 45 minutes or more.
